Instructions
• Preheat the oven to 400°F. Line a rimmed baking sheet with foil or parchment paper and place an oven-safe wire rack on top.
• Trim the Brussels sprouts, remove any damaged outer leaves, and cut each sprout in half lengthwise. Pat thoroughly dry and season lightly with salt and black pepper.
• Cut the thin-cut bacon slices in half crosswise. Wrap each Brussels sprout half with one half-slice of bacon, using additional bacon as needed depending on the number and size of the sprouts. Place each piece seam side down on the wire rack, leaving a little space between them so the bacon can roast rather than steam.
• Bake for 20 minutes before glazing. This gives the bacon time to render and begin crisping before the balsamic glaze is exposed to the oven's heat.
• While the Brussels sprouts bake, combine the 25 Star Dark Balsamic Vinegar, brown sugar, and Dijon mustard in a small saucepan. Bring to a gentle simmer over medium-low heat and cook for 5–7 minutes, stirring occasionally, until slightly reduced and glossy. Remove from the heat. The glaze will continue to thicken slightly as it cools.
