Balsamic Chicken
Herbed Balsamic Grilled Chicken
Description
A clean, balsamic-forward grilled chicken built in layers. A dark balsamic marinade develops deep savory flavor, while a reduced glaze and final drizzle bring brightness and balance. Simple, bold, and designed to let the balsamic stand out naturally.
Recipe Overview
Servings: 6
Prep Time: 15 minutes (plus marinating)
Cook Time: 15 minutes
Ingredients
6 boneless skinless chicken thighs
1/2 cup 25-Star Dark Classic Balsamic Vinegar
3 tablespoons Garlic Olive Oil
1 tablespoon fresh basil, minced
1 tablespoon fresh chives, minced
2 teaspoons lemon zest
1 garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
• In a bowl, whisk together Dark Classic Balsamic, Garlic Olive Oil, basil, chives, lemon zest, garlic, salt, and pepper.
• Reserve about one-third of the marinade for the glaze. Toss chicken with the remaining marinade and let sit for at least 10 minutes or refrigerate for several hours for deeper flavor.
• Remove chicken from marinade and lightly pat dry. Add a small additional pinch of salt before grilling to reinforce the savory base layer.
• Grill over medium heat for 6–8 minutes per side until the chicken reaches 165–170°F internally and develops good caramelization.
• While chicken cooks, transfer reserved marinade to a saucepan. Bring to a boil and simmer until slightly reduced into a glossy glaze.
• Let chicken rest for 3–5 minutes before serving. Drizzle with the warm balsamic glaze.
• Finish with a second light drizzle of fresh balsamic right before serving for brightness and layered balance.
Chef’s Tip
The double balsamic finish is the key move — one layer cooked into the glaze for depth, and one fresh drizzle at the end to keep the flavor alive and balanced.
Flavor Variations
• Blackberry Dark Balsamic for a deeper fruit-forward finish
• Herbes de Provence Olive Oil for a more herb-driven profile
• Add roasted cherry tomatoes for sweetness and acidity
• Add a small touch of honey to the glaze for a softer balance
Pairings
Pairs well with grilled vegetables, roasted potatoes, rice, or a simple green salad. Keep sides clean and balanced so the balsamic remains the focus.
Recipe Notes
Chicken thighs stay juicier and more forgiving on the grill, but this same layered balsamic method also works well with chicken breasts — just shorten the cooking time slightly.
