Ingredients
2 pounds carrots, peeled and halved lengthwise if large
3 tablespoons Garlic Infused Olive Oil
3 tablespoons 25 Star Dark Balsamic Vinegar
1 tablespoon honey
1 teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon fresh thyme leaves
Fresh parsley for garnish
Instructions
• Preheat oven to 425°F and line a baking sheet with parchment paper.
• In a large bowl, whisk together the Garlic Infused Olive Oil, 25 Star Dark Balsamic Vinegar, honey, salt, black pepper, and thyme.
• Add the carrots and toss until fully coated.
• Spread the carrots evenly across the prepared baking sheet.
• Roast for 30–35 minutes, turning once halfway through cooking, until tender and caramelized around the edges.
• Spoon any extra balsamic glaze from the pan over the carrots before serving.
• Garnish with fresh parsley and serve warm.
