Ingredients

5 tablespoons freshly squeezed lemon juice
4 large pears, peeled, cored, and cut into wedges
2 large apples, peeled, cored, and cut into wedges
3 tablespoons Butter Flavored Olive Oil
1 teaspoon fresh rosemary, finely chopped
2 bay leaves
⅓ cup Fig Dark Balsamic
⅓ cup packed light brown sugar
Pinch of kosher salt
Freshly cracked black pepper

Instructions

• Preheat oven to 250°F.

• Add 2 tablespoons lemon juice to a large bowl and toss pears and apples to coat evenly.

• In a large roasting pan or rimmed baking sheet, heat Butter Flavored Olive Oil over medium heat until warm and fragrant.

• Add rosemary, bay leaves, Fig Dark Balsamic, remaining lemon juice, and brown sugar. Bring to a gentle simmer and stir until the sugar fully dissolves.

• Season fruit lightly with salt and black pepper and transfer to the roasting pan.

• Toss thoroughly until all fruit is evenly coated.

• Arrange fruit in a single layer and roast slowly for about 6 hours, turning pieces every hour during the first several hours.

• Begin checking texture after 2–3 hours. The fruit should become deeply concentrated in flavor while remaining moist and flexible.

• Remove pieces individually as they finish cooking if needed.

• Cool completely before serving or storing.

The goal is concentrated flavor — not dried fruit leather. The fruit should stay glossy, tender, and slightly chewy with rich balsamic depth.
