Ingredients

3 pounds skinless chicken breasts
2 tablespoons Meyer Lemon Olive Oil
1 tablespoon Persian Lime Olive Oil
1½ teaspoons kosher salt (or to taste)
¾ teaspoon freshly cracked black pepper
1 teaspoon dried thyme
3 cloves garlic, lightly smashed
¼ cup Blackberry Dark Balsamic Vinegar
Optional garnish: fresh basil, thinly sliced


Instructions

• Preheat the oven to 400°F. Pat the chicken breasts dry with paper towels to help them brown evenly.

• Place the chicken in a large bowl and drizzle with the Meyer Lemon Olive Oil and Persian Lime Olive Oil. Season with salt, pepper, dried thyme, and smashed garlic, tossing until evenly coated.

• Arrange the chicken in a lightly oiled baking dish or oven-safe skillet in a single layer.

• Roast uncovered for 20–25 minutes, until the chicken is nearly cooked through and registers about 155–160°F internally.

• Remove the pan from the oven and drizzle the Blackberry Dark Balsamic evenly over the chicken.

• Return the pan to the oven and roast for another 5–8 minutes, until the chicken reaches 165°F and the balsamic has thickened slightly.

• Remove from the oven and let rest for 5 minutes. Spoon the pan juices over the chicken, garnish with fresh basil if desired, and serve.
