Ingredients:
2½ pounds bone-in, skin-on chicken thighs or drumsticks
2 tablespoons Jalapeño Olive Oil
1 tablespoon Habanero Olive Oil (use less if sensitive to heat)
1½ teaspoons kosher salt (or to taste)
¾ teaspoon freshly cracked black pepper
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground cinnamon
½ teaspoon dried oregano
2 cloves garlic, minced
½ cup tomato sauce
¼ cup 25-Star Chocolate Dark Balsamic Vinegar
Optional garnish: chopped cilantro or sesame seeds
Instructions:
• Preheat the oven to 400°F. Pat the chicken dry with paper towels.
• Season the chicken with salt, pepper, cumin, smoked paprika, cinnamon, and oregano.
• Heat the Jalapeño Olive Oil in a large oven-safe skillet over medium-high heat.
• Add the chicken skin-side down and sear for 4–5 minutes per side until browned.
• Reduce heat to medium. Add the garlic and cook for about 30 seconds, just until fragrant.
• Stir in the tomato sauce and Chocolate Dark Balsamic, scraping up any browned bits.
• Drizzle in the Habanero Olive Oil and stir gently to combine.
• Transfer the skillet to the oven and roast uncovered for 25–30 minutes, until the chicken reaches 165°F and the sauce thickens slightly.
• Remove from the oven and let rest for 5 minutes before serving.
