Ingredients

1 tablespoon Coconut White Balsamic
2 ounces pineapple juice
1 ounce cream of coconut
¼ ounce fresh lime juice
2 ounces light or lightly aged rum, for cocktail version
1 ounce coconut water plus 1 additional ounce pineapple juice, for mocktail version
¾ cup crushed ice
Pineapple wedge, pineapple leaf, or toasted coconut, for garnish


Mocktail Version

• Add 1 tablespoon Coconut White Balsamic, 3 ounces pineapple juice, 1 ounce coconut water, 1 ounce cream of coconut, ¼ ounce fresh lime juice, and ¾ cup crushed ice to a blender.

• Blend just until smooth, creamy, and evenly combined. Avoid over-blending, which can melt the ice and thin the drink.

• Check the texture. If the mixture is too thick for the blender to circulate, add coconut water 1 tablespoon at a time and blend briefly after each addition.

• Pour immediately into a chilled glass.

• Garnish with a pineapple wedge, pineapple leaf, or light sprinkle of toasted coconut and serve immediately.


Cocktail Version

• Add 2 ounces rum, 1 tablespoon Coconut White Balsamic, 2 ounces pineapple juice, 1 ounce cream of coconut, ¼ ounce fresh lime juice, and ¾ cup crushed ice to a blender.

• Blend just until smooth, creamy, and slushy. Avoid running the blender longer than necessary so the ice does not melt excessively.

• Check the texture. If needed, add pineapple juice 1 tablespoon at a time to help the mixture circulate.

• Pour immediately into a chilled Hurricane glass, Poco Grande glass, or large cocktail glass.

• Garnish with a pineapple wedge, pineapple leaf, or light sprinkle of toasted coconut and serve immediately.


Chef’s Tip

Use cream of coconut, not unsweetened coconut cream, for the classic Piña Colada texture and sweetness. The two products are not interchangeable. Keep the pineapple juice and cream of coconut well chilled before blending, and use crushed ice so the drink reaches a creamy consistency quickly without excessive blending. Coconut White Balsamic already contributes coconut flavor, sweetness, and acidity, so this version needs less cream of coconut than an especially rich or sweet Piña Colada.

The classic Piña Colada is built around rum, pineapple juice, coconut, and ice. International Bartenders Association proportions use approximately 50 ml rum, 30 ml coconut cream, and 50 ml pineapple juice, while other respected modern versions adjust the pineapple, coconut, and citrus to achieve different levels of richness and brightness.

This variation uses Coconut White Balsamic as a concentrated flavor component rather than simply adding it on top of a fully sweetened classic recipe. Reducing the cream of coconut to 1 ounce prevents the finished drink from becoming overly sweet or heavy, while ¼ ounce fresh lime sharpens the pineapple without overwhelming the coconut and balsamic flavors.

For a thicker drink, add another small handful of crushed ice and pulse briefly. For a thinner drink, add pineapple juice or coconut water 1 tablespoon at a time. Avoid adding large amounts of liquid or ice at once, since either can quickly throw off the creamy texture.
