Recipe Overview
Servings: 6–8
Prep Time: 10 minutes
Cook Time: 15–18 minutes
Ingredients
3 lb salmon fillet, skin removed
1 cup 25 Star Dark Balsamic Vinegar
¼ cup dark honey
4 garlic cloves, minced
½ tsp cayenne pepper
½ tsp Aleppo pepper or paprika
3 tbsp Dijon mustard
2 tbsp Garlic Olive Oil
Salt and black pepper
⅓ cup chopped fresh parsley
⅓ cup chopped fresh dill
Instructions
• Preheat oven to 425°F.
• In a small saucepan, combine 25 Star Dark Balsamic Vinegar and honey.
• Bring to a gentle boil, then reduce heat and simmer 12–15 minutes until slightly thickened.
• Remove from heat and cool 5 minutes.
• Whisk in garlic, cayenne, Aleppo pepper, Dijon mustard, and Garlic Olive Oil until smooth.
• Line a large baking sheet with parchment paper.
• Season salmon generously with salt and black pepper.
• Brush one side of the salmon with glaze and place glazed-side down on the baking sheet.
• Brush the top generously with more glaze, reserving a small amount for finishing.
• Bake on the center rack 15–18 minutes, or until salmon flakes easily with a fork.
• Remove from oven and brush lightly with remaining glaze.
• Finish with fresh parsley and dill before serving.
Chef’s Tip
For the best texture, avoid overbaking the salmon. Remove it from the oven as soon as it flakes easily in the thickest section.
Flavor Variations
• Use Chocolate Dark Balsamic for deeper roasted richness
• Swap in Pomegranate Dark Balsamic for brighter acidity
• Use Rosemary Olive Oil for a more herb-forward finish
• Use Blood Orange Olive Oil for subtle citrus lift and balance
Pairings
Pairs beautifully with roasted asparagus, Mediterranean rice, garlic potatoes, sautéed green beans, or a crisp arugula salad. Excellent alongside Pinot Noir or Chardonnay.
Recipe Notes
The balsamic glaze thickens further as it cools, creating a glossy finish that coats the salmon beautifully. Fresh herbs are essential here — they brighten the richness and balance the sweet-savory glaze.
