Mocktail Version

Cocktail Version

• Fill a wine glass generously with ice.

• Add 2 tablespoons Fig Dark Balsamic.

• Pour in 3 ounces chilled dry Prosecco, followed by 2 ounces chilled sparkling water or club soda.

• Stir gently from the bottom upward just once or twice to combine without knocking out the bubbles.

• Garnish with a fresh fig slice when available, or a thin orange peel, and serve immediately.

Chef’s Tip

Use a dry or Brut-style Prosecco rather than a sweeter sparkling wine. Fig Dark Balsamic already contributes concentrated fruit and sweetness, so a dry sparkling wine keeps the spritz refreshing and food-friendly. Chill the Prosecco, sparkling water, and glass before building the drink, and stir only enough to distribute the balsamic.

Flavor Variations

• Blackberry Dark Balsamic: substitute Blackberry for a deep berry spritz with rich fruit character
• Raspberry Dark Balsamic: substitute Raspberry for a brighter, more aromatic berry version
• Pomegranate Dark Balsamic: substitute Pomegranate for a slightly tarter, fruit-forward spritz
• Bordeaux Cherry Dark Balsamic: substitute Bordeaux Cherry for a rich cherry spritz that pairs beautifully with dry sparkling wine
• 25 Star Dark Balsamic: substitute 25 Star Dark for a classic balsamic-forward version with deep caramelized character
• Pear White Balsamic: substitute Pear for a lighter, more delicate sparkling aperitif
• Cranberry Orange White Balsamic: substitute Cranberry Orange for a bright, festive citrus-fruit spritz
• Fig Orange: express a strip of orange peel over the finished Fig spritz and use it as the garnish for a subtle citrus aroma
• Fig Rosemary: lightly clap a small rosemary sprig before garnishing for a savory herbal aroma that complements fig

Recipe Notes

Fig Dark Balsamic functions similarly to a concentrated fruit shrub in this spritz, supplying fruit character, sweetness, and acidity in one ingredient. The mocktail uses sparkling water to lengthen that concentrated flavor into a refreshing drinking-vinegar-style spritzer. The cocktail follows the spirit of the classic Italian spritz by pairing the concentrated flavor component with dry sparkling wine and soda. Because Fig Dark Balsamic is more concentrated than a traditional aperitivo liqueur, this recipe deliberately uses a smaller proportion of balsamic and a larger proportion of bubbles. Keep all ingredients well chilled and add the carbonated components immediately before serving.
