Ingredients

2 pounds Yukon Gold or Russet potatoes, peeled and cubed
¼ cup Garlic Infused Olive Oil
½ cup warm whole milk, plus more as needed
¼ cup grated Parmesan cheese (optional)
Salt, to taste
Freshly ground black pepper
Fresh chopped chives, for garnish

Instructions

• Place the cubed potatoes in a large pot and cover with cold water. Season generously with salt and bring to a boil.

• Reduce heat and simmer for 15–20 minutes, or until fork tender.

• Drain the potatoes well and return them to the warm pot for 1–2 minutes to remove excess moisture.

• Mash the potatoes using a potato masher or potato ricer until smooth.
