Ingredients
2½–3 pounds bone-in, skin-on chicken thighs or drumsticks
2 tablespoons Jalapeño Olive Oil
1 tablespoon Garlic Olive Oil
1½ teaspoons kosher salt (or to taste)
¾ teaspoon freshly cracked black pepper
1 teaspoon dried thyme or oregano
3 cloves garlic, lightly smashed
¼ cup Grapefruit White Balsamic Vinegar
Optional garnish: chopped parsley or green onions
Instructions
• Preheat the oven to 425°F. Pat the chicken dry with paper towels to help the skin brown.
• Place the chicken in a large bowl and drizzle with the Jalapeño Olive Oil and Garlic Olive Oil.
• Season with salt, pepper, dried herbs, and smashed garlic, tossing until evenly coated.
• Arrange the chicken skin-side up in a roasting pan or oven-safe skillet, leaving space between pieces.
• Roast uncovered for 30–35 minutes, until the chicken is nearly cooked through and the skin is golden.
• Remove the pan from the oven and pour the Grapefruit White Balsamic evenly over the chicken.
• Return the pan to the oven and roast for another 10–15 minutes, until the chicken reaches 165°F and the balsamic has warmed and lightly glazed the chicken.
• Remove from the oven and let rest for 5 minutes. Spoon the pan juices over the chicken before serving.
• Finish with an additional drizzle of Grapefruit White Balsamic at the table, to taste.
