Grapefruit White Balsamic Roasted Chicken
Description:
This roasted chicken is juicy, flavorful, and easy to make. Grapefruit White Balsamic adds a bright, sweet-tart finish, while jalapeño olive oil brings gentle heat and garlic keeps everything savory. It’s a simple roast chicken that feels fresh and a little different without being complicated.
Ingredients:
2½–3 pounds bone-in, skin-on chicken thighs or drumsticks
2 tablespoons Jalapeño Olive Oil
1 tablespoon Garlic Olive Oil
1½ teaspoons kosher salt (or to taste)
¾ teaspoon freshly cracked black pepper
1 teaspoon dried thyme or oregano
3 cloves garlic, lightly smashed
¼ cup Grapefruit White Balsamic Vinegar
Optional garnish: chopped parsley or green onions
Instructions:
• Preheat the oven to 425°F. Pat the chicken dry with paper towels to help the skin brown.
• Place the chicken in a large bowl and drizzle with the Jalapeño Olive Oil and Garlic Olive Oil.
• Season with salt, pepper, dried herbs, and smashed garlic, tossing until evenly coated.
• Arrange the chicken skin-side up in a roasting pan or oven-safe skillet, leaving space between pieces.
• Roast uncovered for 30–35 minutes, until the chicken is nearly cooked through and the skin is golden.
• Remove the pan from the oven and pour the Grapefruit White Balsamic evenly over the chicken.
• Return the pan to the oven and roast for another 10–15 minutes, until the chicken reaches 165°F and the balsamic has warmed and lightly glazed the chicken.
• Remove from the oven and let rest for 5 minutes. Spoon the pan juices over the chicken before serving.
• Finish with an additional drizzle of Grapefruit White Balsamic at the table, to taste.
Chef’s Tips:
• Add the balsamic toward the end so it keeps its sweet-tart balance.
• Jalapeño Olive Oil adds gentle heat — if you want less, reduce slightly and add more at the table.
Flavor Variations:
• Swap Garlic Olive Oil for Basil Olive Oil for a fresher finish.
• Use this same method with Cornish hen, adjusting cook time as needed.
• Add sliced onions or carrots to the pan for an easy one-pan meal.
Pairings:
Roasted vegetables, rice, potatoes, green beans, or a simple mixed green salad.
Recipe Notes:
This recipe is designed to show how Grapefruit White Balsamic can be used generously and confidently. Use it as a main ingredient, not just a finishing touch, and adjust to your taste.
