Recipe Overview
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Serves: 4
Ingredients
1½–2 pounds pork chops
2 tablespoons Tuscan Herb Fused Olive Oil
2 tablespoons butter
Salt and freshly cracked black pepper, to taste
Italian seasoning, to taste
2 scallions, finely chopped
4 garlic cloves, minced
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
¼ cup 25 Star Dark Balsamic Vinegar
¼ cup honey
2 tablespoons Dijon mustard
Fresh parsley or scallions for garnish
Instructions
• Pat pork chops dry and season generously with salt, pepper, and Italian seasoning.
• Heat Tuscan Herb Fused Olive Oil and 1 tablespoon butter in a large skillet over medium-high heat.
• Add pork chops and sear about 3–4 minutes per side until deeply golden and nearly cooked through. Remove and set aside.
• Reduce heat slightly and add remaining butter, scallions, garlic, rosemary, and thyme. Sauté 1–2 minutes until fragrant.
• Add 25 Star Dark Balsamic and honey, stirring to combine. Simmer 2 minutes until glossy and lightly reduced.
• Stir in Dijon mustard until fully incorporated and smooth.
• Return pork chops to the skillet and spoon sauce over the top while simmering 2–3 additional minutes until heated through and the pork reaches 145°F.
• Finish with parsley or fresh scallions before serving.
Chef’s Tip
Let the balsamic sauce reduce just enough to coat the back of a spoon. Over-reducing can overpower the balance between the honey and balsamic.
Flavor Variations
• 25 Star Dark Balsamic creates a classic rich sweet-savory glaze
• Blackberry Dark Balsamic adds bold berry depth that pairs beautifully with pork
• Fig Dark Balsamic creates a deeper earthy sweetness with rosemary and thyme
• Add crushed red pepper flakes for subtle heat
• Finish with an extra drizzle of balsamic after plating for brighter layered flavor
Pairings
Serve with roasted vegetables, creamy mashed potatoes, wild rice, green beans, or a crisp mixed green salad.
Recipe Notes
This balsamic skillet sauce system works beautifully with chicken thighs or pork tenderloin as well. Fresh herbs help balance the richness and keep the sauce vibrant.
