Ingredients

1½ pounds halibut or cod, cut into large chunks
2 tablespoons Tuscan Herb Olive Oil
1 tablespoon Persian Lime Olive Oil
1 teaspoon kosher salt (or to taste)
½ teaspoon freshly cracked black pepper
½ teaspoon ground cumin
½ teaspoon smoked paprika
8–12 small corn or flour tortillas

Slaw:
3 cups shredded green cabbage
½ cup shredded red cabbage
¼ cup thinly sliced red onion
¼ cup chopped cilantro
½ cup finely diced fresh mango
¼ cup Mango White Balsamic Vinegar
1 teaspoon Habanero Infused Olive Oil (start light, adjust to taste)

Instructions

• Pat the fish dry with paper towels and season with salt, pepper, cumin, and smoked paprika.

• Heat the Tuscan Herb Olive Oil in a large skillet over medium-high heat.

• Add the fish and cook 2–3 minutes per side, until just cooked through and lightly browned.

• Remove the pan from heat and drizzle the Persian Lime Olive Oil over the fish, tossing gently to coat.

• In a large bowl, combine the green cabbage, red cabbage, red onion, and cilantro.

• Add the mango, then drizzle the Mango White Balsamic and 1 teaspoon Habanero Infused Olive Oil over the slaw and toss well.

• Taste and build heat gradually if desired — you can always add more, but you can’t take it away.

• Warm the tortillas.
