Ingredients
2 pounds fresh mussels, cleaned and debearded
1 tablespoon Garlic Infused Olive Oil
4 tablespoons unsalted butter
3 cloves garlic, minced
¼ cup dry white wine (optional)
2 tablespoons Raspberry Dark Balsamic
¼ cup fresh parsley, chopped
Salt and freshly cracked black pepper, to taste
Crusty bread, for serving
Instructions
• Rinse mussels thoroughly under cold water and remove any beards or debris. Discard any mussels that remain open after tapping.
• Heat Garlic Infused Olive Oil and butter in a large Dutch oven or heavy pot over medium heat.
• Add minced garlic and sauté 1–2 minutes until fragrant, being careful not to brown the garlic.
• Pour in white wine if using and simmer 2–3 minutes until slightly reduced.
• Stir in Raspberry Dark Balsamic and simmer another 1–2 minutes until the broth becomes glossy and aromatic.
• Add mussels and cover with a lid.
• Steam 5–7 minutes, occasionally shaking the pot, until the mussels open fully. Discard any unopened mussels.
• Stir in fresh parsley and season lightly with salt and black pepper.
• Spoon mussels and broth into bowls and serve immediately with warm crusty bread for dipping.

Do not overcook the mussels. Remove them from the heat as soon as they open to keep them tender and delicate.
