Ingredients
1 tablespoon Peach White Balsamic
¾ cup frozen peach slices, straight from the freezer
4 ounces chilled dry, fruit-forward rosé wine, for cocktail version
3 ounces chilled white grape juice plus 1 ounce cold water, for mocktail version
Up to ¼ ounce simple syrup, optional and to taste
1–3 tablespoons cold rosé, white grape juice, or water, only if needed for blending
Fresh peach slice or mint sprig, for garnish
Mocktail Version
• Add ¾ cup frozen peaches, 1 tablespoon Peach White Balsamic, 3 ounces chilled white grape juice, and 1 ounce cold water to a blender.
• Blend until thick, smooth, and slushy. If the mixture is too thick for the blender to circulate, add cold water or white grape juice 1 tablespoon at a time, blending after each addition.
• Taste before adding any simple syrup. If additional sweetness is needed, add up to ¼ ounce simple syrup and blend briefly again.
• Pour immediately into a chilled wine glass or coupe.
• Garnish with a fresh peach slice or mint sprig and serve immediately.
Cocktail Version

Because both the peaches and Peach White Balsamic contribute sweetness, add simple syrup only after tasting the finished blend.

Because freezing and blending mute flavor and can introduce dilution, a flavorful, fruit-forward rosé works better than an extremely delicate wine. This version uses frozen peaches to create most of the slushy texture rather than automatically adding ice, preserving more peach and rosé flavor.
Peach White Balsamic contributes both fruit character and sweetness, so additional simple syrup is deliberately optional. Start without it, blend, taste, and add only enough to balance your particular peaches and wine. For the best texture, serve immediately after blending.
