Ingredients

Warm Pear Filling:
2 ripe but firm Anjou or Bartlett pears, peeled if desired and sliced
2 tablespoons unsalted butter
2 tablespoons light brown sugar
3 tablespoons Pear White Balsamic, plus 1–2 teaspoons for finishing
½ teaspoon vanilla bean paste
½ teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice
⅛ teaspoon ground cinnamon
Pinch of fine sea salt

Vanilla Mascarpone Cream:
8 ounces mascarpone cheese, cold but slightly softened
½ cup cold heavy cream
2 tablespoons powdered sugar
½ teaspoon vanilla bean paste
Pinch of fine sea salt

For Serving:
4 homemade or bakery-style shortcakes, split
¼ cup toasted sliced almonds
Fresh mint leaves
Extra lemon zest


Instructions

• In a chilled bowl, beat the mascarpone, heavy cream, powdered sugar, vanilla bean paste, and fine sea salt until smooth, fluffy, and softly thickened. Refrigerate while preparing the pears.

• Melt the butter in a large skillet over medium heat.

• Add the sliced pears in an even layer and cook 3–4 minutes, turning gently, until they begin to soften and lightly caramelize around the edges.

• Add the brown sugar, cinnamon, fine sea salt, lemon zest, and lemon juice. Stir gently until the pears are glossy and the sugar begins to melt.

• Add the Pear White Balsamic and cook 1–2 minutes, spooning the syrup over the pears, just until the fruit is tender and coated with a light glaze.

• Remove from heat before the balsamic reduces too far. The pears should be glossy, tender, and spoonable, not sticky.

• Split each shortcake in half.

• Spoon mascarpone cream over the bottom halves, followed by warm Pear White Balsamic-glazed pears and toasted almonds.

• Add the top halves of the shortcakes and finish with another spoonful of mascarpone cream.

• Garnish with additional warm pears, toasted almonds, fresh mint, lemon zest, and a very light drizzle of fresh Pear White Balsamic immediately before serving.
