Ingredients

1 tablespoon Raspberry Dark Balsamic
1 ounce smooth raspberry purée or well-muddled fresh raspberries
½ ounce fresh lime juice
3–4 ounces cold sparkling water or club soda
Ice
Fresh mint sprig, for garnish
Optional: up to ¼ ounce simple syrup, if the raspberries are especially tart
Optional for cocktail version: 1½ ounces vodka


Mocktail Version

• Stir together Raspberry Dark Balsamic, raspberry purée, and fresh lime juice until well combined.

• Taste the raspberry mixture before adding any extra sweetness. If the berries are especially tart, stir in up to ¼ ounce simple syrup.

• Fill a tall glass with ice and pour in the raspberry mixture.

• Top with 3–4 ounces cold sparkling water or club soda and stir gently once or twice to combine while keeping the bubbles lively.

• Lightly slap the mint sprig between your palms to release its aroma, garnish the drink, and serve immediately.


Cocktail Version

• Add Raspberry Dark Balsamic, raspberry purée, fresh lime juice, and vodka to a cocktail shaker filled with ice.

• Shake until well chilled.

• Strain into a tall glass filled with fresh ice. For a smoother, more polished drink, fine-strain to remove raspberry seeds.

• Top with 3–4 ounces cold sparkling water or club soda and stir gently once to combine without flattening the carbonation.

• Lightly slap the mint sprig between your palms to release its aroma, garnish, and serve immediately.


Chef’s Tip

For the cleanest, most polished fizz, press muddled raspberries through a fine-mesh strainer before mixing. Keep the sparkling water very cold and add it only after the other ingredients are mixed so the finished drink stays crisp and effervescent.
