Tender tuna steaks quickly seared until lightly crisp on the outside and beautifully pink in the center, then finished with a savory balsamic-caper pan sauce layered with fresh herbs and citrus. Bright, Mediterranean-inspired, and incredibly clean tasting.

Ingredients

4 tuna steaks (about 6 oz each)
2 tbsp 25 Star Dark Balsamic Vinegar
1 tbsp Garlic Olive Oil
1 tbsp capers, drained and rinsed
1 tbsp fresh oregano, chopped
Salt and black pepper to taste
1 lemon, cut into wedges


Instructions

• Pat tuna steaks dry thoroughly with paper towels.

• Season both sides lightly with salt and black pepper.

• Heat Garlic Olive Oil in a large skillet over medium-high heat.

• Once hot, add tuna steaks and sear 2–3 minutes per side for medium-rare.

• Remove tuna from the skillet and set aside.

• Reduce heat to medium and add 25 Star Dark Balsamic Vinegar to the skillet.

• Stir while scraping up the browned bits from the pan.

• Add capers and fresh oregano and simmer 2–3 minutes until slightly reduced.

• Return tuna steaks to the skillet and spoon the balsamic-caper sauce over the top.

• Cook 1–2 minutes more until warmed through.

• Serve immediately with lemon wedges.


Chef’s Tip

Tuna cooks very quickly — keeping the center slightly pink creates the best texture and prevents the steaks from becoming dry.

• Use Fig Dark Balsamic for deeper savory richness
• Swap in Pomegranate Dark Balsamic for brighter acidity
• Use Rosemary Olive Oil for stronger herbal warmth
• Add extra lemon zest for sharper citrus lift


Pairings
