Ingredients:

  • 1 lb. large shrimp, peeled and deveined
  • 1/4 cup garlic-infused olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey (optional for a hint of sweetness)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions:

1. Prepare the Shrimp:

  • Rinse and pat the shrimp dry with paper towels.

2. Marinate:

  • In a bowl, whisk together the garlic-infused olive oil, lemon juice, honey (if using), smoked paprika, salt, and black pepper.
  • Add the shrimp and toss to coat evenly.
  • Cover and refrigerate for 20-30 minutes.

3. Preheat the Grill:

  • Heat your grill or grill pan to medium-high heat.

4. Assemble the Skewers:

  • Thread 4-5 shrimp onto each skewer, ensuring they are secure but not packed tightly.

5. Grill the Shrimp:

  • Grill the skewers for 2-3 minutes per side, or until the shrimp turn pink and opaque with grill marks.

6. Serve:

  • Remove from heat and drizzle with additional garlic-infused olive oil if desired.
  • Garnish with fresh parsley and lemon wedges for serving.
