Garlic Olive Oil Roasted Vegetables

Ingredients:

  • 4 cups mixed vegetables (broccoli, carrots, bell peppers, and zucchini)
  • 3 tablespoons garlic-infused olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs

Instructions:

  1. Preheat oven to 400°F (200°C).
