Wild Turkey Milanese with Mixed Greens & Flavored Balsamic Reduction
This dish features crispy, golden-brown wild turkey cutlets served with a refreshing mixed greens salad and a flavorful balsamic reduction.
Ingredients
For the Turkey Milanese:
- 2 wild turkey breasts, pounded to about ¼-inch thickness
- 1 cup all-purpose flour (or gluten-free alternative)
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (or Italian-style breadcrumbs)
- ½ cup grated Parmesan (optional)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ¼ cup garlic & roasted chili olive oil (or butter olive oil for a milder taste)
For the Mixed Greens Salad:
- 4 cups mixed greens (arugula, spinach, baby kale, etc.)
- ½ cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- ¼ cup shaved Parmesan or crumbled feta (optional)
- ¼ cup lemon olive oil
- 1 tbsp fresh lemon juice
- Salt & pepper to taste
For the Balsamic Reduction:
- ½ cup blackberry balsamic vinegar (or fig, pomegranate, or classic balsamic)
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tbsp unsalted butter (or substitute with olive oil for dairy-free)
Instructions
Step 1: Prepare the Balsamic Reduction
- In a small saucepan over medium heat, combine blackberry balsamic vinegar, honey, and minced garlic.
- Bring to a gentle simmer, stirring occasionally. Reduce until the mixture thickens slightly (about 5-7 minutes).
- Remove from heat and whisk in butter or olive oil. Set aside.
Step 2: Bread and Cook the Turkey Milanese
- Set up a breading station:
- Bowl 1: Flour, salt, pepper, smoked paprika, and oregano.
- Bowl 2: Beaten eggs.
- Bowl 3: Panko breadcrumbs and Parmesan.
- Dredge each turkey cutlet in flour, then dip in egg, and finally coat with the panko-Parmesan mixture.
- Heat garlic & roasted chili olive oil in a large skillet over medium heat.
- Cook the breaded turkey cutlets for about 3-4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
Step 3: Assemble the Salad
- In a large bowl, toss mixed greens, cherry tomatoes, and red onion with lemon olive oil, lemon juice, salt, and pepper.
- Top with shaved Parmesan or crumbled feta, if using.
Step 4: Serve
- Plate the turkey Milanese with a portion of the mixed greens salad.
- Drizzle the turkey with the blackberry balsamic reduction for a sweet-savory finish.
