For the Pork Chops:

For the Honey Balsamic Sauce:

2 tablespoons butter

2 scallions, finely chopped

4 garlic cloves, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

¼ cup balsamic vinegar

¼ cup honey

2 tablespoons Dijon mustard

Prepare the Pork Chops:
Season your pork chops generously with salt, pepper, and Italian seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and bubbling, add the pork chops and sear them for about 3 minutes on each side. Aim for a total of 6 minutes to ensure they’re golden brown but not overcooked. Remove from the pan and set aside. -
Make the Sauce:
In the same skillet, melt the second tablespoon of butter. Add the scallions, garlic, rosemary, and thyme, sautéing for 2 minutes until fragrant. Pour in the balsamic vinegar and honey, stirring to combine. Let it simmer for 2 minutes to meld the flavors, then stir in the Dijon mustard to thicken the sauce. Taste and adjust with salt as needed. -
Reheat the Pork Chops:
Return the pork chops to the pan, spooning the sauce over the top. Let them heat through in the sauce for another 2-3 minutes, ensuring they reach an internal temperature of 145°F.
