This is a light and fresh dish that balances the sweetness of strawberries with the tang of balsamic vinegar. 

Balsamic Strawberry Halibut

Ingredients:

  • 4 halibut fillets
  • 1 cup fresh strawberries, sliced
  • 2 tbsp strawberry balsamic vinegar (or any berry-infused balsamic vinegar)
  • 1 tbsp olive oil
  • 1 tbsp honey (or maple syrup)
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh basil, chopped (optional, for garnish)

Instructions:

  1. Prepare the Balsamic Glaze: In a small saucepan, combine the strawberry balsamic vinegar, honey, and Dijon mustard. Bring to a simmer over medium heat, stirring occasionally. Let it cook for about 5 minutes, until it thickens slightly. Season with a pinch of salt and pepper to taste.

  2. Cook the Halibut: Heat the olive oil in a large skillet over medium heat. Season the halibut fillets with salt and pepper on both sides. Add the fillets to the skillet and cook for about 3-4 minutes per side, depending on the thickness of the fish, until golden brown and the fish flakes easily with a fork.

  3. Prepare the Strawberries: While the fish is cooking, slice the fresh strawberries. You can lightly season them with a pinch of salt and pepper to enhance their flavor if you like, but this is optional.

  4. Plate the Dish: Once the halibut is cooked, place the fillets on serving plates. Spoon the balsamic glaze over the fish, letting it drizzle down the sides. Top with the sliced fresh strawberries.

  5. Garnish and Serve: Garnish with fresh chopped basil for an added pop of color and flavor (optional). This dish pairs wonderfully with sautéed greens, roasted vegetables, or a light salad.

Serving Suggestions:

  • Serve with a side of roasted or mashed potatoes for a heartier meal.
  • A simple arugula salad with lemon vinaigrette complements the tangy sweetness of the balsamic glaze.
