  • 4 salmon fillets (about 6 oz each)
  • 1/4 cup chocolate balsamic vinegar
  • 2 tablespoons honey (or maple syrup)
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard (optional for extra tang)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh thyme or parsley (optional garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prepare the Glaze:

    • In a small saucepan, combine the chocolate balsamic vinegar, honey, minced garlic, and Dijon mustard (if using).
    • Bring to a gentle simmer over medium heat, stirring occasionally until the mixture thickens slightly (about 3-4 minutes). Remove from heat.
  3. Season the Salmon:

    • Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and black pepper.
  4. Glaze the Salmon:

    • Brush a generous amount of the chocolate balsamic glaze over each fillet. Reserve some glaze for serving.
  5. Bake:

    • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature of 145°F or 63°C).
  6. Serve:

    • Drizzle the reserved glaze over the salmon before serving. Garnish with fresh thyme or parsley if desired.
